15 minute Black Bean and Corn Salsa
The perfect dish for potlucks when you want to have something healthy on the table.

1 can black beans
1 cup frozen/canned corn
1 red bell pepper diced
1/2 cup finely chopped onion or green onions
1 cup diced tomatoes
3 tbsp. freshly chopped cilantro
Dash of lime juice (or squeeze one lime)
1. Open can of black beans, place in strainer and rinse off excess “juice”. dump in bowl.
2. Drain frozen/canned corn in strainer to remove excess water, then dump in bowl with beans.
3. Add diced onions, bell peppers, tomatoes and cilantro and stir. Add lime juice to your taste.
Serve with baked tortilla chips or enjoy as a salad!
